Fall is in the Air.....
Fall is here, and as the leaves and temperature change so do our local-seasonal ingredients! The local NC Pork farmers are bringing us some beautiful products so look for them on our regular menu soon! Harpoon Winter Warmer is flowing from the tap, and the spiced rum, bourbon, and whisky is pouring! Pumpkin is in the air, and in creme brulee and cheesecake as well. Ahhh, Fall is here and so are some outrageous menu items. Starting with dessert, Margie has been baking Asian Spiced Pear tart with Michael's honey vanilla gelato and fresh Carmel...Also a Dutch Apple Cheesecake and Gayle is into the pumpkin and Grand Mariner creme brulee! Keep your eyes open for the return of the Ginger-Honey Duck soon to come. Michael also has been playing around with Pork Shank, slow roasted with mint cous-cous in a Moroccan saute!

Cheers to Fall everyone! Chef Michael has been working on some new fall menu items, so expect to see some changes soon. As the cold sets in he's bringing slow roast duck, butternut squash, late harvest tomato, and NC Oysters back to the menu in the near future! This week he's getting some very, very, very pretty Mahi in as well as Soft Shell crabs still coming in from the coast. Gayle & Margie have been hitting the wine buyers tastings and the new vintages are insane! Some forever favorites are back and better than ever, as well as some of the best ever "bang for your buck" wines around! Keep your eyes open for exciting new arrivals coming soon! Salute!

The Soft shell Crabs are being bathed by Michael in a spicy Thai coconut sauce over lo-mien! Happy! Happy! Red fish is in and beautiful with a Caribbean twist, as well as local pork tenderloin being stuffed with apples, Gorgonzola and macadamia nuts.....oh yeah! Oh, and before I forget, can we talk about the chocolate-brownie-white chocolate gelato? Yeah, you can finish with some of that too!!!!

Happy Weekend everyone! Michael is at it again and this week he brought back NC Soft Shell Crabs, Shrimp, & Snapper from his trip down East. The fruits of the sea are amazing, and we are so lucky to be so close in Cary! He also got the "In" on some Maine Lobsters, he's stuffing those critters with lo-mein noodles, NC Shrimp and bathing them in a Thai Curry-Scallop Saute! So good! Fall is in the air, Gayle is baking Maple Bread Pudding with some beautiful Maple that her parents sent from New England. New wine arrivals will be added shortly, as the tasting season begins, our wine list will change! Keep your eyes and mouths open!

Back from Vacation!
We are back from Labor Day/End of Summer vacation! We will open today, Wednesday, September 4 @ 5:00! Michael is headed back from the NC Coast with a car full of fish off the boat this morning......we will keep you posted on what he's got! Until then, enjoy the last days of Summer!

Happy Labor Day weekend! Can't believe summer is over already, but lucky enough for us Chef Michael got in some beautiful soft shell crabs. He's pan searing these little buggers in a spicy Thai curry sauce....around here that's what we call Yum! Yumm! Michael still has NC Black Grouper on the specials list as well as Mesquite Grilled Skirt Steak, Cold Smoked Veal Chops and Tempura Tuna Rolls.......see you soon! Winding Down August
Hey folks, this week Chef Michael has some NC Black Grouper, he's putting on the peanut crust and adding his ever famous coconut-yellow curry-kaffir lime-mango sauce to it. He's also had some friends crawl into the back door this week. Yes, the Thai Lobster is back with sticky rice, NC Shrimp and a red curry-chili-scallop sauce.
Tis the Season for vintage changes on the wine list.....get ready for some AMAZING new arrivals. Gayle and Margie have been tasting new vintages as well as some new wines. Keep your eyes open, they should be hitting the list by late September or early October! Also, get ready to chew your way thru some yummy Porters, Stouts and Oktoberfest beers we have coming our way! Thus far for this week, Michael is still getting some BEAUTIFUL grouper in from the coast and his mind is in the Islands, so he's rolling on with the peanut crust and yellow curry-mango-kaffir lime sauce. He's also got the Veal Chop, Mesquite Grilled Fillet, and as long as the NC Sneads Ferry Clams keep coming he's doing Cioppino! See you soon! The last week before Max and the crew head out for summer vacation! In that case, we have some amazing specials this week......The heirloom tomatoes are still insane, and we are serving them with local blue cheese and a chive vinaigrette. For entrees, Michael is peanut crusting some beautiful Monk fish over a sweet potato-yucca cake with a Caribbean pan sauce. He's also grilling some killer skirt steak with a bacon-choirzo demi! Come get your fix on this week! We will be closed from Sunday June 29- July 7. See you on the 8th and enjoy your 4th of July!

Week of June 17........Summer is upon us and so are some new specials of gastronomic proportions! For starters, LOCAL NC heirloom tomatoes are in! We are slicing them in all of their rainbow glory and giving them a drizzle of chive vinaigrette and blue cheese crumbles....
On the entree side, Michael is peanut dusting some NC Grouper and serving it with a black bean triangoli with a Mango-coconut-chili-kaffir lime saute.......hello! This is the fish while we wait for the sauce to "give it a try"........

Happy Memorial Day Weekend! To enjoy the beautiful weather & to kick off the summer we've got some Seafood Gazpacho, Cornmeal Crust Fried Oysters & Tempura Tuna Roll to get you started. For dinner Michael has got some gorgeous Maine Lobsters in a saffron-shellfish broth, Sea Bass over shrimp risotto in an Asiago-roast garlic pan sauce, and the ever famous Mesquite Veal Chop. Last but not least, the house aged, dry-rubbed, cold smoked, NY Strip & Fried Oysters!

OK, so it's been a quiet week, but look out - the weekend is upon us and so are some new menu items. After 22 years in business, Michael has dusted off some of his old menus and added a pasta section to the menu.
Grilled Veal & Leek Ravioli in a pink-tomato-Gorgonzola sauce. Smoked Mushroom Tortellini with a Marsala-roasted garlic-fresh thyme sauce with crispy pancetta. And the most favorite, Parmesan-Ricotta Gnocchi with a basil pesto cream sauce with chorizo, arugula and asiago cheese. Again, these are all on the permanent menu.

Cold Smoked-Dry Aged NY Strip & Fried Oysters - with a potato croquette and Creole pan sauce.
Snapper - over baby shrimp risotto in an asiago-roast garlic-cream sauce.
And let's not forget the bar! The weather is heating up, thus Peach Sangria is here! Margie's been soaking Peaches and it is AMAZING!

Welcome back sunshine! Michael has some gorgeous Sea Bass tonight and will be serving that with a blue crab risotto and Asiago cream sauce. He has also been dry aging some NY Strips and is adding some fried NC oysters to that with a spicy, go figure, Creole sauce! A long time favorite! The Beef Short Rib is back this week, loving the black pepper-Parmesan gnocchi and rustic mushroom-tomato-basil pan sauce. Tonight Chef Michael has decided he is over the Sesame & Scallion Crust Snapper and brought in some killer Grouper! He's pan searing that baby and pairing it up with some NC Shrimp and bathing the two of them in a house made green curry & kaffir lime sauce! Gotta love it! The rest of this weeks specials remain the same for the evening!
Don't forget to save room for dessert - be it to eat or drink - we have AMAZING cakes, gelatos and bread pudding as well as ports, cordials and dessert wines! SALUTE!

We all know Chef/Owner Michael Schiffer IS BACK ON THE SAUTE STATION!!!! All his "old school" fans are crawling out of the woodwork folks, so you may want to get your reservations in. Michael has been shopping the local farmers markets as well as hitting up his fishing buddies down East in Davis and Sneads Ferry. Word on the street - SOFTSHELL CRABS are on the way! Tis the season as we say around here. Kaffir Lime and Iranian Saffron are also finding their way into some of this weeks specials.
On the wine side, Chelahem Vineyards from Willamette Valley has blessed us with some of the "Ridgecrest" Pinot Noir - Gayle likes it, Margie likes it, and Robert Parker REALLY likes it with his 90 points!
One last reminder - next weekend is Mother's Day and Graduation! Get your reservations in now!
